Friedman moves between Eastern European and Middle Eastern traditions, between home kitchens and contemporary restaurants, between what enters the pantheon of Israeli cuisine and what remains outside. As part of his journey, he will try to understand what Israeli cuisine is today, what are its sources of influence, what are its points of interface with the local Arab-Palestinian space, and what cultural, social, and geographical forces have shaped it in the past and present.
